Beignets 2 Go is a dessert food truck with a major hub in historic Eastern Market. Since our inception in 2014 we have experienced tremendous growth and popularity. We began as a Saturday only operation and have now expanded to serve our customers 5 days a week. As the food truck industry and popularity continues to grow we have found the need to add another food truck into our rotation. With multiple events occurring during the same hours, having another food truck will allow us to not only service an entirely new set of customers, it will also allow us to staff another team of employees.
the steps
We have located an insulated trailer designated for a food truck build out. Eastern Market Growing Communities has graciously agreed to match donations to purchase the trailer. Once we have purchased our food truck trailer will we begin the build out to include refrigeration, fryer, microwave, and 3 compartment sink.
why we're doing it
An issue we face as a one truck food operation is then ability to operate in dual locations during the same hours. Eastern Market is our major hub, however, quite often sports games. graduation parties, wedding rehearsals, bat and bar mitzvahs are typically scheduled during our hours at Eastern Market. Having another food truck would allow us to service dual locations. It will also allows us the opportunity to employ more staff.
